Choko Pickel

1.5kg choko
750g onions
plain salt
1.2 liters brown malt vinegar
1 kg brown sugar
1 dessertspoon turmeric
1 dessert spoon dried ginger
1 dessert spoon curry powder
1 cup plain flour


Peel choko and onion and chop. Sprinkle with salt and cover with water. Stand over night and then drain. Rinse with cold water. Pour into a large pan, 1/2 vinegar and water. Bring to the boil, add the choko and onion and bring back to the boil. Mix all dry ingredients to remaining vinegar and gradually add to mixture until mixture thickens. Reduce for 10 minutes. Bottle into 6x 600ml jars
